Situated in the Charlotte Mews, Champs is a great meeting place for sports
fans who can relax with a drink and some great pub food. Champs nicely
carries the effect of an old English pub with plenty of sports memorabilia
decorating the walls. Gordon Parry passed on his recipe to the popular
Seafood Salad which can be enjoyed on Champ's outdoor patio.
Seafood Salad
(Makes four appetizer servings)
1 medium sized head of iceberg lettuce, broken up
2 diced celery stalks
1 peeled and diced carrot
1 slice of chopped red cabbage
Mix the above items together.
In another bowl mix:
8 oz of salad shrimp
6 oz of pollock and snow crab blend
Put the salad mix in four bowls and top with the seafood mix.
Garnish with chopped tomato and two cucumber slices.
Best served with light Italian dressing.
HINT: If you want your lettuce to be nice and crisp,
soak it in ice water for 2 to 3 minutes prior to preparation.
