Hazra Khan was only too pleased to provide us with her recipe for Black Eyed Peas with Rice.

Black Eyed Peas with Rice

1 cup of long grain parboiled rice, washed
2 cups of black eyed peas, cook and drained
1/2 of chicken or beef
1 cup of coconut milk
1 tbsp of vegetable oil
Salt to taste
1 small onion chopped
1 sweet pepper, red or green, chopped
2 tomatoes, chopped
1 sprig of thyme, chopped
1 sprig of green onions, chopped
2 to 3 cloves of garlic, crushed

Cut up meat, wash and season with salt, garlic, thyme, parsley, and green onions. Heat oil in a deep pot, brown onions, add meat and fry until it is sticking to the pot. Add rice and peas, fry for two minutes. Add tomatoes, peppers, and rest of seasoning. Add coconut milk and enough water to cover the rice. Let simmer until the rice is tender and all the water is absorbed.
