Heat a cast-iron frying pan until hot. Sprinkle the spice on fish or poultry and then cook evenly on both sides, making sure the spices are seared. Keep turning meat until it is cooked through. Warning: this process creates a lot of smoke, so cook in a well-ventilated area.
