recommended as one of the finest restaurants to enjoy genuine Indian cuisine
by Anne Hardy's "Where To Eat In Canada". Owner Paul Dasaj offers us his recipe for a very tasty eggplant dish called
Bayngan Barta.
Bayngan Barta
Roast an eggplant, about 1 and a half pounds, for about 45 to 50 minutes.
After roasting peel the skin off and chop the pulp.
Dice an equal amount of onions, about four or five
Saute the onions in half a cup of vegetable oil
Add two tomatoes, chopped
1 teaspoon of tumeric
1 teaspoon of Spanish paprika
1/2 teaspoon of Garam Masala
Add the pulp to it and simmer for an hour.
